A Different Table.

Indian food asks more from wine than most pairing charts allow. The society exists to find bottles that keep up with spice, acid, fat, and smoke.

Start with the Plate.

For too long, wine pairing rules were written for a different table. They assumed cream sauces, mild seasoning, and one dish at a time.

Indian food is different. It brings spice, acidity, heat, and texture to the same plate. That asks for a different way of thinking about wine.

The Indian Wine Society writes about that overlap. We look at the wines, the dishes, and the places they come from.

Whether it is a crisp Indian Sauvignon Blanc with Goan Prawn Balchão or a chilled Gamay with tandoori chicken, we try to keep the advice practical.
